Gastronomy constitutes an important facet of the Moroccan civilization, it's also the symbol of a rich and ancient kitchen’s tradition, let’s just remember that the Moroccan kitchen is classified among the most famous in the world, this richness is due to multiversity of the components of Moroccan society (Amazigh, Arab, African, European, Jew, etc…).

There are a lot of dishes and drinks that you must taste when you come to Morocco, and Pastilla it’s one of them, it really worth that you do not end your visit to Morocco before to try it, there are actually many types of Pastilla, according to ingredients and regions.

Actually, there is a big divergence of point of views over the origin of the Pastilla, some says that the Pastilla is originally a Moroccan dish from the city of Fez, and it was transferred by the Maurs during the Moroccan-Islamic authority at Andalusia, but some others think the inverse, that the Pastilla is an Andalusian traditional dish and the Moriscos brought it to Morocco and North Africa after they had been expulsed from Iberian peninsula.

Anyway, Pastilla is a type of pastry made from dough, as we said lately, there are many types of Pastilla, the most famous stuffed with chicken, but there are also the other kinds stuffed with meat or fish or the sea fruits, and after cooking it, we add the fine sugar and ground almond powder and cinnamon, you can add also some other ingredients for the final decoration.
